SUMMARY

On a Hyper-V host machine, I would like to protect all the virtual machines on it as well as protect the Hyper-V server itself from a disaster. Can I and what licenses do I need for that?

ISSUE

To protect all the virtual machines, you need to purchase a license for the number of sockets in the hypervisor. To protect the Hyper-V host using File Level and Bare Metal methodology, you will have to purchase a server license. So to sum it up, you will need to purchase socket licenses for the virtual environment and the server license to protect the host itself.
